    Fuck it, am grilling Hanger Steak tonite. I remember I saw it on an episode of Anne Burrell's secret of a restaurant chef food network show, heading to the store right now.

    Yeah it's "Pittsburg style" or "Pittsburg rare" and it's highly recommended.

    I like my steak rare. Especially when I grill at home. It has the most flavor. It baffles me how people order well done steaks. It tastes like charcoal

    I don't get the whole "well done" thing either. It's tough, dry, and basically flavorless. I think mainly germiphobes and people who assume the juice is blood (it's not) like well done. It's actually even less healthy than medium rare though because some cancerous stuff forms when you cook it to that point.

    I'm a little surprised there's no well done enthusiast jumping in here. We're almost unanimous on Medium Rare here.

    Sorta on topic. I do like to sample the ground beef when i am shaping hamburgers. Raw with a lil salt.

    When i lived in Fla. Friends thought i was sick. i think the south is a medium well to well done region

    Senior citizens, and kids. Kids get squeamish because of the color.

    I think kids have way more or way stronger taste buds than adults, and so things that are garbagey and awful still taste amazing. Cheap, awful, frozen pizza tasted completely amazing to me when I was 9 years old, even though as an adult I couldn't eat those same Ellio's frozen pizzas. More complicated/better flavors that grown-ups like are completely overwhelming as a kid, and at least if you were me, you wanted nothing to do with them.

    I just wanted disgusting McDonald's burgers that I deeply and genuinely believed were ~100 times better than anything you could get at any fine dining establishment. But then you hit 12 or so and by that point you have more of a grown-up palate (sense of taste is declining to adult levels,) and you try and start preferring real food. By 16, McDonald's is straight-up inedible.

    My theory is that many people simply never enter that phase (it takes a little effort and involves stepping out of the comfort zone) and continue eating like kids their whole lives - plain pasta, Kraft mac & cheese, Domino's pizza, McDonald's, etc. So when it's time for a steak, they just recoil at the color and texture of less cooked meat since that's how a child would react.

    Old people like well-done steaks for a different reason. People who grew up in the Depression and WWII eras, they probably didn't grow up eating much steak. So by default, the gut reaction is going to be "Um... obviously I want my food cooked..." Also old people are terrified of death and are probably worried about bacteria, even though that's only a threat if you eat a completely raw steak. Even blue steak is cooked on the outside, which is where all the bacteria are.

    I almost broke up with my gf when she asked me to cook her steak well done. Better off eating beef jerkey.

    I enjoy NY Strips and T bones the most, followed by Ribeye. Gotta be medium rare tho.

    My underrated cut is Tri Tip.

    I agree with pretty much all of this. I've noticed that it's a texture thing with the kids too. My son is under 2 and he won't eat meat but he likes sauerkraut and other adult foods.

    Great cut of meat, I think Burrell's marinade needed a little sweetness, maybe some molasses to cut the pungency of the Dijon (50-50 Dijon to molasses is my favorite glaze for pork tenderloins) but very tasty and more tender than I thought when cut against the grain. Medium rare most of the way through although the ends were more medium, which was fine.

    Will definitely grill it again, probably use a teriyaki marinade.
