Because if you don't get it the game is over since it's a two score game. If you go for 1 it's still a one score game. You only need one two-point conversion, put it off as long as possible.
It seems to be common procedure. If you MISS it now, game is instantly over, even if you get the onsides kick. Better to keep hope alive till the last possible minute.
