I have to chime in here. I’ve lived in Northern New England for a long time. Fish chowder is what you really should be looking at. Clams are great for a bunch of other things but they can get tough. Haddock, pollack, cod etc. Cannot go wrong. now you know
You're not telling me anything I don't know - the fish chowder at the original Legal Sea Food in Cambridge is probably the best soup I've ever had. I have had many hundreds of bowls of clam chowder in my life (I lived in New England for several years as well). In my experience, the clams in a well-made clam chowder made with good clams should not be tough.
See the thing is I grew up on your basic LI little neck, which is basically nectar of the gods. You put that in a stew and you deserve to be shot. The local clams need to be prepared properly or they taste like shoe leather. What ever happened to Italian Seafood?
