The thing is the original joke is just way off base. Hofstra is way better academically than LIU, Adelphi, Molloy etc. It is no way Ivy League , but it is a fairly competitive school to get into and requires above average grades and a solid SAT score. I never heard any joke to the sort as mentioned and lived over 25 years of my life with 15 minutes of the school and got my bachelor’s degree there in 1989.
