Because that's not how the 5th Amendment works. You can't just invoke it as a witness any time you don't want to answer a question.
Correct, unless she was somehow involved in the murder and by testifying she would incriminate herself.
Just to follow up, if her testimony wouldn't incriminate her, she could be found in contempt of court if she refused to testify, and thrown in jail until she agreed to testify. This is the reason why journalists can get sent to jail for refusing to reveal a source. To be honest, while I wouldn't be surprised at all if they threatened her with this possibility already, I would be surprised if they actually did it. In any event, the trial would go on, and once the prosecution rested their case she would be released, since there wouldn't be any need for her testimony at that point. Journalists can be forced to reveal a source to a grand jury, and that can go on for months, so they're in a much more vulnerable position. Apparently Hernandez isn't so confident that she would do the time for him.
