    Anyone have any good recipes? I'm looking for something new to try.

    quantities are very loose, best to experiment

    Spinach and Sausage Lasagna

    ~1lb high quality sausage (from the meat counter nothing prepackaged)
    ~1lb baby spinach leaves
    4-5 cloves of garlic
    1-2 shallots
    1 large sweet onion
    2 large cans crushed tomatoes
    ricotta cheese
    shredded mozzarella cheese (or 3 cheese blend whatever you prefer)
    butter
    plenty of fresh basil
    1 package no boil lasagna noodles (i hate boiling lasagna noodles pain in the ass)

    Rather than put it in each step I'll say it now. Salt and Pepper EVERYTHING to taste

    1) Cut up your shallots, onion and basil finely and mince the garlic (always mis en place first!)
    2) In a large pan cook up the shallots with some butter and garlic (NOTE: make sure to go easy on the butter in all the steps, just enough to surround the other ingredients otherwise your lasagna will get greasy)
    3) Wash your spinach (de-stem if you prefer, personally i like the texture with the stems) and cook with shallots until wilted
    4) Set aside the cooked spinach in a large bowl
    5) Preheat your oven (350 typically but whatever your lasagna noodle packet says)
    6) Get your sauce going, you want it to cook for a while so we'll have it stew while you're cooking the sausage
    7) Combine a little more than half the onions in a large stock pot with some garlic until translucent
    8) Add in the two cans of crushed tomatoes with the basil and let stew, stirring occasionally (this will beat the hell out of any premade sauce)
    9) Combine the rest of the onions with some butter and some garlic in a separate pan and cook until fragrant and the onions start to become translucent
    10) Add in the sausage and continue to mash and stir around until cooked and set aside
    11) Combine the cooked spinach with ricotta cheese (about a full container perhaps a little more)
    12) Sauce should be done by now so now it's time to assemble the lasagna!
    13) In a baking dish put some cooking spray or lightly coat with butter
    14) Assemble in this order - sauce, noodles, sausage, sauce, shredded cheese,noodles, spinach sauce cheese, noodles sauce cheese
    15) Stick in the oven till the noodles are cooked (easily pierced by a fork)

    Simple recipe but quicker than you may think and gets the job done

    Something more creative: Chicken Curry
    Red, Green, Jalapeno and whatever other peppers you want
    Onions
    Ginger
    Cilantro
    Salt, Pepper

    mince the ingredients very finely (pulse in a food processor would be best if you have one)

    Cook in a pan with a little oil until nice and soft (should sort of congeal a bit)

    Add in coconut milk, stir and let stew for a few minutes

    Add in chicken (preferably on the bone for extra tenderness) and cook over low-medium heat until chicken is cooke through

    Serve over rice or whatever else you want.
