Looks like some great street food you can get in NY. Wish I still ate meat because that looks damn good - especially if it's lamb. Lamb is an either you love it or hate it thing. I loved it. I love Middle Eastern food, African food, Thai food, and Indian food. Also Peruvian (they got some weird mish mash influences over there), Brazilian (ditto), Cuban, hell I love it all. Back to ME food, on the goodies side, Baklava and Halva are my favorites. I made my own Halva once, came out surprisingly good for a first effort. So yeah, what kind of meat is this and how do you make it? The only meat I eat is venison that my neighbor gifts me because he's an excellent shot and I know how it was killed. I imagine venison wouldn't work for this because it isn't fatty enough.

Yes. The skewers are metal and you have to press the meat around the metal. It isn't an easy job by the way. See the video. Yes it is lamb meat. But the meat has to have high fat content for flavor. You can try with Venison meat if you want but it probably will taste a lot different then lamb once it meets all the spices. I don't like Baklava or Halva but Halva was my mom's favorite desert before she passed away so I try to eat it whenever I find somewhere to remember my mom.
Who the F doesn't like Baklava or Halva?! That's like hating pizza or chocolate. Damn. There's also a Syrian dessert that my Daddy used to bring home from his work. Pistachios with honey, in some kind of nougat I can't recall the name of it.
I will let Dierking and joe to chime in. I don't know. Stokes was elitist and this Rollo guy isn't. He doesn't even know a good wine. Stokes would have been all over it.
